The tube is made of tinned food grade sheet.
Length: 8.5 cm
Diameter: 1.8 - 1.4 cm
Recipe:
Dough:
- 400g plain flour
- 250g butter (or half and half butter and Heru)
- 200 ml of whipping cream
- 1 straight spoon of vinegar
- pinch of salt
Filling:
6 egg whites and 360g of granulated sugar.
Method:
We make a dough from the ingredients, which we leave wrapped in the refrigerator to rest overnight.
Roll out the dough while lightly dusting and cut into strips. We wind the strips on metal tubes. Brush the rolled cream rolls with the beaten egg yolk.
Bake in a heated oven at 180'C
Prepare the boiled snow for cream rolls by adding 360g of granulated sugar (semolina sugar) to six egg whites and start whipping over steam. Beat for about 10 minutes.
Let it sit for the snow to harden. Sprinkle with powdered sugar and you're done.
